Caballero - Francisca
With this catuai produced by the Caballero family in Honduras, you can expect an extremely complex and elegant cup of coffee. We find delightful berry, cocoa, and herbal notes. The sheer quality is really a testament to the hard work over the years by the Caballeros on their farms.
Everything they do at the farms is documented, and they invest considerable time and resources both in new equipment and planting of new coffee varieties in order to improve the quality of the coffee.
The Caballeros are extremely committed to the environmental sustainability of their farms. A lot of their energy and focus goes towards improving the soil of their farms to ensure a healthy growing environment for their coffee shrubs. Therefore, they produce organic fertilizer made from cow and chicken manure mixed with pulp from coffee cherries and other organic material. This is used in addition to some mineral fertilizer to ensure that the coffee plants get the nutrients they need. Oranges, avocados, flowers, bananas and other fruits are also grown at the farm. This creates the biodiversity that ensures good growing conditions, shade for the coffee trees, and ultimately extremely high-quality coffee.
Marysabel and Moises has always focused on quality, leading to numerous selections in in the 'Cup of Excellence' over the years. This can be thought of as the 'oscars of coffee', where producers are recognised each year at the national level for producing the highest quality coffee lots.
We have omni-roasted this lot, which means it can be preferred just as well as filter coffee, or as espresso.
