Los Pirineos SL28 Black Honey
History
It’s the fourth year in a row we have now been working together with Diego and his team. Los Pirineos is a farm that is known as one of the pioneers for experimenting with processing and cultivating very rare varietals of coffee. And that is exactly what they have done with this particular coffee release.
Los Pirineos SL28 Black Honey is a very limited and exclusive coffee, that is complex, juicy, and multi-layered. The varietal in this case is SL28, which is most historically and typically grown in Kenya, and is associated with very juicy, fruity and berry-focused coffees.
The black honey processing does such a great job in really intensifying the inherent flavours from both the varietal and the origins terroir, without overwhelming or masking these flavours. In the cup, we experience flavours of black tea, blackcurrant and raspberry.
Quality as well as social and environmental responsibility have been first priorities within the production of this coffee. On the farm level, all of the water used in production and processing of coffee comes from collected rainwater and honey production contributes to the stability of local ecosystems. All employees on Diego Baraona’s farm are ensured year-round and consistent work.
